Ingredients

  • 300 g edamame in the pod (frozen is fine)
  • For the cooking water: 1 tbsp salt per litre
  • A little finishing salt

Method (fresh edamame)

  1. Wash the edamame and snip off a little from both ends of the pods with scissors.
  2. Rub them by hand with about 1 tsp salt.
  3. Bring 1 litre of water to the boil with 1 tbsp salt, add the edamame and cook for 4–5 minutes.
  4. Drain and spread them out to cool (with a fan, for example). Salt to taste.

Method (frozen edamame)

  1. Follow the instructions on the bag first. Allow about 2–3 minutes in salted water.
  2. Drain and salt lightly.

Tips

  • To cool them, spread them out rather than plunging them into water: the flavour does not become watery.
  • Cutting the ends of the pods lets the salt get in.
  • In France: frozen edamame are sold in Asian grocery stores and large supermarkets.
